Ingredients:
100g Dry mushrooms
500g Minced Meat (Pork)
200g Sichuan Preserved Vegetables
Cooking oil
Chinese wine
Tapioca Starch
Vegetarian Mushroom Seasoning OR Salt
Oyster sauce (Vegetarian)
Dark soy sauce

Directions
i) Quickly clean the mushrooms before soaking them.
ii) Soak the mushrooms in hot water, for a minimum of 1 hour, until you feel it’s soften.
iii) Place the Sichuan preserved vegetables under running water for about 20 mins, to clear off the overly saltiness.
iv) Boil a pot of water to prepare for the noodles.
v) Slice & mince the Sichuan preserved vegetables.
vi) Slice & mince the mushrooms.
vii) Save up the water soaked for mushrooms for later use.
viii) Stir fry minced mushrooms until it turns golden brown and rest it aside.
ix) Stir fry minced Sichuan preserved vegetables until it’s totally dry off, add in cooking oil, and continue stir fry until it turns whitish fried and rest it on the side.
x) Stir fry minced meat (pork) until it’s golden brown.
xi) Add in mushrooms to stir fry together.
xii) Add in 1 tablespoon of soybean paste.
xiii) Add in 4 pumps of oyster sauce, approx. about 2 tablespoons.
xiv) Add in 2 teaspoon of fish sauce.
xv) Add in 1 teaspoon of Chinese cooking wine.
xvi) Mix all the seasonings together, follow by add in the mushrooms water & a small cup of water.
xvii) Cover the lid and let it bring to boil.
xviii) Add in 1 tablespoon of dark soy sauce (the thick kind of soy sauce) to darken the color and get the taste up.
xix) Add in the pre-mixed tapioca starch (Tapioca starch is normally in powder form, make into starch by adding in water).
xx) Keep stirring the pot while adding in the tapioca starch bit by bit to ensure it’s not stick together.
xxi) Add in a pinch of salt & mushroom vegetables seasoning.
xxii) It’s ready when you see it turn thicker.
xxiii) Bring it on the noodles that you prepared earlier, and you can enjoy after mixing it altogether!

Side Notes:
§ If you like it with beef, you may try, and see whether the texture is the same. It will be something like the beef Bolognese in dark soy sauce form.
§ The noodles is very much of your preferences, you can mix the base with even ramen, our family likes it with knife-shaved noodles (刀削面), as the texture is a bit different when you eats it.
