Fusion Thai Spicy Tom Yum Noodles

Ingredients:


500g Noodles (we use HuNan Noodles this time)

500g Bamboo Clams

400g Beancurd Skins

50g Fish Maw

500g Sea Cucumber

5 meatballs & fish filament each (up to your preferences)

5 tbsp Tom Yum paste


Fish Sauce Salt OR Vegetarian Mushroom Seasoning -------------------------------------------------------------------------------------------------------------------------------


Directions


Handling seafood,

i) Bamboo Clams

a. Clean bamboo clams under running water & sift the sands out for a few times.

ii) Fish Maw

a. Use hot water to soak the fish maw for about 10 mins until soft.

b. Cut it into bite size.

iii) Sea Cucumber

a. As we bought ready cleanse pack, hence no hassle in processing and cleaning the sea cucumber, we just briefly clean it through running water.

b. Cut it into bite size.


Steps,

i) Boil a pot of water, and boil noodles.

ii) Soak the bean curd skin under clean water for about 3 mins until soft.

iii) Drain the bean curd skin & start to cut into bite size.

iv) Boil another pot of water for our main meal.

v) Add in fish maw & sea cucumber to let it cook for a good 5 mins.

vi) Add in meatballs & fish filament.

vii) Follow by beancurd skin.

viii) Mix 5 tbsp of tom yum paste & hot water, to prep for the tom yum sauce (we use ready tom yum paste, as it’s fast)

ix) Add in the mixed tom yum sauce to the boiling pot.

x) Get a quick taste and see how you like it, or if it’s lack of any taste ( be it for salty, spicy, sour what not)

xi) Add the right amount of fish sauce based on your preferences.

xii) Follow by the cooked noodles & cook for a good 1-2 mins)

xiii) Lastly, add in bamboo clams, and let the pot brings to boil.

xiv) If you like it sour, you may juice a bit of lemon in; if not, it will be readied to serve.

Side Notes:

§ For the meatballs & fish filament, it’s very much up to your preferences to add or not to add, or to replace with others you like.

§ Optionally, you can replace bamboo clams to lala clams OR crabs, tiger prawns. It’s the seafood series and you will still get the fresh seafood taste out of it.
