8 mins Go-To Luncheon Meat Omelet & Broccoli

Ingredients:


4 slices of luncheon meat

2 eggs

300g broccoli Cooking Oil

Butter

Salt

---------------------------------------------------------------------------------------------------------------------------


Directions


i) Get all the ingredients ready before cooking. Boil a pot of water to blanch the broccoli.

ii) Crack the eggs into a bowl and stir it until both the egg yolk & egg white are mixed.

iii) When the water boils, add the broccoli to blanch for 2-3 mins.

iv) Pan-fry the luncheon meat, do it without oil at the beginning to keep oil from splattering; when there’s no more water, pour a little bit of oil into the pan to continue the pan fry until it turns golden brown.

v) Add in the eggs & let the runny eggs flow underneath the luncheon meat.

vi) After pan fry the eggs for about 2 mins, flip them to the other side & wait for another min for them to turn a little brownish.

vii) Same time, drain off the water for broccoli and add in some butter.

viii) Mix the butter with the broccoli evenly and until it melts.

ix) Add a pinch of salt & mix it again. It’s ready to serve!

Side Notes:


§ Feel free to pair your omelet fillings with other veges cheese, shrimps, chicken slices, ham, if you don’t prefer luncheon meat.
