35mins Comfort Double Eggs Minced Pork Porridge

Ingredients:


3 Eggs

5 Century eggs

500g Minced Pork

1 cup rice (suggested to use fragrant rice for porridge)


Salt OR Vegetarian Mushroom Seasoning -------------------------------------------------------------------------------------------------------------------------------


Directions


i) Wash 2-3 times & drain the rice and let the rice sit for an hour.

ii) Follow by adding rice & water into the pot and bring water to boil.

iii) Meanwhile, remove the century eggshells, cut them into cubes.

iv) Once the water comes to boil, lift the lid and let it simmer for 10 minutes.

v) Meantime, whisk the eggs and set aside.

vi) For garnishing, prep for coriander.

vii) Stir the porridge constantly and add in minced pork, stir again, hence the minced pork won’t clump together.

viii) Next, add in century eggs, and stir again to prevent them clump together.

ix) Lastly, add in the whisked eggs slowly, and mix it constantly to have the eggs spread around the porridge.

Side Notes:


§ We didn’t add in any flavoring to the porridge this time, as the century eggs come with a rather heavy taste. But feel free to add a pinch of salt in OR may consider using vegetarian mushroom seasoning.

§ Optionally, you may also garnish with fried garlic, onions, ginger slices to raise the flavors.
