20mins Winey Stir-Fried Lala Clams

Ingredients:
1kg Lala Clams
140g Spring Onions
10g Leaf Celery
50g Ginger
2 Chili Padi (up to the level of spiciness you can go to)
3 cloves Garlic
30ml – 50ml Chardonnay (White Wine)
1 tbsp Fish Sauce
2 tbsp Oyster Sauce
Salt OR Vegetarian Mushroom Seasoning ------------------------------------------------------------------------------------------------------------------------------
Directions:
i) Clean the lala clams briefly under the running water & sift the sands out for a few times.
ii) Add 2 tbsp of salt and let lala clams sit in cold water for at least 30mins.
iii) Slice ginger.
iv) Slice garlic.
v) Slice chili padi.
vi) Cut leaf celery.
vii) Cut spring onions.
viii) Heat the pan with a little cooking oil.
ix) Add in sliced garlic and ginger, stir fry it until it turns light brown, rest it aside.
x) Add in spring onions & leaf celery, stir fry for a while until the water runs dry, and add a little oil into it and stir fry it over.
xi) Add in chili padi, stir fry it for a while and when you smell the mix fragrant, add in garlic and ginger and repeat the stir fry for a good one minute.
xii) Follow by adding the lala clams in right away.
xiii) Add in oyster sauce, and fish sauce & stir fry it until the colors of the shell turns orangey.
xiv) Add white wine in (and a little water if you feel it’s too salty)

Side Notes:
§ We didn’t add in any other seasoning like salt or vegetarian mushroom powder to the dish, as the lala clams come with a tad of salty taste. But feel free to add a pinch of salt in OR may consider using vegetarian mushroom seasoning.
§ Also, regarding the chardonnay, if you don’t like it with chardonnay. Feel free to add in Chinese cooking wine/ ShaoXing wine.
