Ingredients:
500g Pork Belly
½ box luncheon meat
500g Kimchi
Leftover rice OR freshly cooked (but let it sit for at least 2 hours) 5 Eggs (for each of us) 1 Seaweed (small pack) Korean sesame oil Salt OR Vegetarian Mushroom Seasoning -------------------------------------------------------------------------------------------------------------------------------
Directions
i) Slice pork belly into bite-size.
ii) Follow by slicing luncheon meat. Half box of the luncheon meat will do good.
iii) Get overnight rice or cook rice freshly but let it sit for at least 2 hours.
iv) Can either make your own kimchi or buy it from the store (I bought it from a local Korean store)
v) Heat the pan and add in pork belly, stir fry it until golden brown. (don’t have to add in cooking oil, as pork belly itself contain lots of oil). Take up once ready.
vi) Add in luncheon meat, same as last step, stir fry it until golden brown.
vii) Add in Kimchi and stir fry together.
viii) Follow by rice, stir fry to get a balance spread of the ingredients.
ix) Add in fried pork belly.
x) Add in Korean sesame oil and you will smell the fragrance from the food enhances.

Side Notes:
§ You may replace pork belly with minced pork. OR if you don’t take pork, replace it with diced chicken.
§ For the eggs, you may or may not add up to your fried rice. We love our kimchi fried rice with sunny side up, as the egg yolk will flow out once you poke it, and it go so well with the fried rice. You should try it.
