Favorite Traditional Homemade Mee-Hoon-Kueh (Noodles served in soup) You won't want to miss


Prep time :1 hour

Cook Time: 30mins

Serves: 5

Ingredients:


300g Flour

300 – 400g Vegetables (Hong Kong Choy Sum OR any other veges of your preferences)

3 tbsp anchovy powder

300g minced meat (pork)

4 eggs (2 for the flour, 2 for the omelets)

250g dried scallops


Cooking Oil

Salt

Vegetarian Mushroom Seasoning

Directions

  • Soup prep

i. Boil a pot (approx. 3L) of water.

ii. Add in 250g dried scallops & bring it to boil for 30 mins to an hour time.

iii. Wait for the dried scallops to simmer and turn soft & tender, it signifies the soup is ready.

iv. Add in 3 tbsp of anchovy powder to let the taste out.

v. Skim off the froth from the soup.


  • Mee-Hoon-Kueh Dough prep

i. Add 300g flour, add an egg in the middle of the flour and slowly mix it together.

ii. 2 mins later, add in another egg & mix it together again.

iii. Follow by add ½ cup water while mixing the flour & eggs; and start kneading the flour until it becomes a dough (usually within 10 mins).

iv. Cover the dough with cloth and let it rest for 20 – 25 mins.

v. Add a tbsp of oil, and continue to roll the dough until it absorbs the oil completely.

vi. Boil a pot of water, simultaneously hand tossed the dough into bite size.

vii. Poach it through the boiling water and pass through the cold river.

viii. Once all dough is done, drain off the water.


  • Other ingredients prep

i. Crack 2 eggs and whisk it.

ii. Fried into a normal omelet.

iii. Prep for the vegetable, here, we use Hong Kong Choy Sum (lots of people like the sweet leaf or called mani cai; OR any other that you prefer)


  • Steps

i. Add the bite-size dough into the soup tenderly.

ii. Let it cook for a good 5 mins & add in meatballs, minced meat, and veggies.

iii. Add a pinch of salt and vegetarian mushroom seasoning.

iv. Mix all together and cook for another 5 mins.

v. It’s ready when it boils.

vi. Serve it with omelet OR either fried anchovy or shallots.

Side Notes:

  • Feel free to pair your own prefer vegetables (lots of people like it with mani cai/ sweet leaf).
